Day two of POLAGRA 2025 – debates, legal trainings and inspiration from the HoReCa Stage
The second day of Polagra showed that the fair is not only an exhibition but above all a platform for sharing knowledge, experience, and inspiration. The day’s program featured important debates, legal trainings, and an intensive series of sessions on the HoReCa Stage dedicated to the power of influencers in gastronomy and creating the guest experience.
Discussions on the main stage focused on key topics for the food sector: sustainable development throughout the entire value chain, the quality and safety of fish in Poland, as well as challenges related to reducing food waste. Experts from administration, business, and industry organizations – including representatives of Lidl Polska, IJHARS, MSC, Mowi, and the Government Agency for Strategic Reserves – emphasized the importance of cooperation across all market segments in order to meet environmental, legal, and logistical challenges. The debate also explored how technology can help reduce losses and how retailers and processors can build lasting competitive advantages based on responsibility and transparency.


On the HoReCa Stage, the energy was driven by influencers and gastronomy professionals. The day began with the training session “Contests by the Book – How to Promote Legally in HoReCa?”, led by Mateusz Górniaczyk from JLSW Law Firm, followed by a series of debates and lectures on what truly attracts customers to restaurants – authentic guest opinions or influencer marketing; the risks of “fame from a single post”; how to prepare for a sudden surge in popularity; and whether the personal brand of a chef carries more weight than the restaurant’s consistent branding. Attendees also listened to lectures on culinary storytelling and authentic ways to showcase the product’s journey “from pasture to plate,” as well as on how to view one’s business through the eyes of a guest. The day on the HoReCa Stage closed with the debate “Guest 2.0 – How to Design the Restaurant Experience Today?”, highlighting new loyalty drivers that go far beyond food quality.

There was also no shortage of practical legal trainings and business-focused presentations. Experts from Eversheds Sutherland discussed effective dispute management and protection against dishonest contractors. KRD Kaczmarski Group provided an analysis of the sector’s performance after the second quarter of the year, while Roman Wendt from Inwenta outlined strategies to help regain control over margins in production companies. CRIDO also shared its expertise during the session “Grants – An Effective Tool for Business Growth.” CRIDO is a Polish advisory firm that has been supporting entrepreneurs for over 20 years in areas such as finance, law, taxation, energy, and innovation.



The second day of POLAGRA confirmed that the fair is a place where business meets education and future trends. The combination of strategic debates, expert legal trainings, and inspiring gastronomy-focused presentations created a space for dialogue on the challenges and opportunities facing the entire food industry.
